Winter in Nepal?

Has anyone been to 6000m Trekking Peaks in Nepal, in January/February? Any advice on permitting, access, and conditions would be greatly appreciated.

How feasible is it to plan to just show up in Kathmandu in mid January, and sort everything out for myself on the ground?

Hope I'm not to late on this reply for you. It is absolutely feasible to just show up in Nepal in January and sort everything out. I went in 2018 in March solo without any plans and did a small trek (Mardi Himal in the Annapurna region). While I was there I did a little research. Returned in 2019 in February and trekked to Kala Patthar (Everest Base Camp). Although neither of these were 6000 meters I continued to do some research while I was there and found it very easy to have done a 6000 meter peak if I wanted. (I was limited with my trekking/travel partner who met me in Kathmandu.) Although some of the peaks may be more difficult that time of year due to weather it seemed very possible. Mera Peak and Island Peak seemed the most feasible. Permits, guides, gear shops and accommodations are all easy to figure out. I definitely preferred going in February than the previous year in late March. Less crowds, better rates, more beautiful and a much more authentic experience.
