Original Recipe

I originaly found this in backpacker magazine here is the recipe as they show it.

1 box rice-a-roni savory whole grains(spanish flavor)
1 1/2 cups water
3 ounces pepper jack cheese
1 cup beef jerkey, shredded
1 small jalapeno pepper (or milder pepper if you prefer, finely chopped
2 cloves garlic, minced
1 small onion, chopped
2 tablespoons olive oil
4 whole-wheat tortillas

In Camp

Heat oil in pot and saute garlic, onion, and pepper for about 3 minutes. Add water, beef jerkey, rice, and seasoning packet. Reduce heat and simmer for about 20 minutes or until rice is cooked and water is absorbed. Toss with cheese and wrap burrito-style in tortillas.
Serves two.

Modifications

I have found that although heavier the uncle bens microwavable spanish rice is alot faster cooking. Cheddar cheese is good because I am normaly carrying that for another meal anyways.

If you use a different type of rice you may need to adjust the amount of water used to accomidate.

Enjoy!
